Barbeque, in the U.S. the word brings images of backyard gatherings, community picnics, State fairs, roadside shacks, smokey restaurants, we think of hot and juicy,delicious meats slathered in sauce, perfectly charred, sweet,spicy or both at once.
In Hawaii we trace the roots from the Maori who's ancient tecchnique of heating stones with fire in a pit placing grasses over the stones placing meat, fish, and yams on top covering with palm leaves and steaming called Hangi, in Tahiti a Hima'a, an umu in the Marquesas, and imu here. As people came to Hawaii they bought other foods and techniques each ethnic group, the Japanese, Portugese, Chinese, Fillipino, Puerto Rican and American has contributed to the wonderful landscape of Hawaiin BBQ. In th recent years Hawaii has welcomed new people who constantly will bring new traditions, because when it comes to food, tradition moves.
